Sundried Tomatoes and Breadcrumb Crusted Chicken

Sundried Tomatoes and Breadcrumb Crusted Chicken:

Ingredients: 6 chicken breasts, thawed ½ package sundried tomatoes, sliced 2 tbsp olive oil 1 tsp oregano 1tsp basil 1 tsp parsley 1 tsp hot garlic paste ½-1 cup bread crumbs 1 egg, lightly beaten

Directions:

1. Preheat oven to 425 F. Line a baking sheet with foil. Set aside. 2. In a food processor, add the tomatoes, olive oil, oregano, basil, parsley, and hot garlic paste. Pulse until the tomatoes resemble like a fresh salsa. Mine was not a paste or smooth. Put in a bag. 3. Take thawed chicken breasts, one at a time and dredge through egg and then place in the bag with the sundried tomato mixture and breadcrumbs. Shake! 4. Take out and place on the foil lined baking sheet. Repeat with each chicken breast. 5. Bake at 425 for 20-25 minutes or until the chicken is cooked all the way through. 6. Cook rice according to the package. I made 1 ½

cups for myself and used frozen broccoli. Portion out and place in refrigerator. Enjoy!!!
