Lemon, Garlic, Butter Shrimp with a Pesto lemon butter sauce over Spaghetti squash

Spaghetti Squash Ingredients:

2 medium sized Spaghetti Squash, halved and baked and shredded

2 tbsp EVOO

2 tbsp Italian Seasoning

Directions:

  1. Preheat oven to 425 degrees F. Line a baking sheet with aluminum foil. Set aside.

  2. Cut the tops of the spaghetti squash off. Throw away. Halve the spaghetti squash and remove the seeds from the inside. Throw those away too.

  3. On a baking sheet put the halves of spaghetti squash, drizzle in each some EVOO and Italian Seasoning. Brush it around and make sure the whole surface is covered, lightly. Flip it over. Bake for 45 minutes or until soft when squeezed with a hot mitt.

  4. When done, spaghetti squash should be able to be squeezed from the sides. Take it out of the oven, set it aside.

Lemon, butter, garlic Shrimp:

Ingredients:

2 bags, medium sized shrimp, thawed and peeled

2 tbsp butter

1 tbsp minced garlic

1 tbsp lemon juice

1 tbsp EVOO

Directions:

  1. Thaw and peel shrimp, set in bowl. In a medium skillet, heat to medium and add to the bottom of the skillet, 1-2 tbsp EVOO. Allow to get hot before putting the shrimp in.

  2. Add shrimp when the skillet is hot. Add garlic, butter, and lemon juice. Cook until the shrimp is a nice pink/orange color.

  3. When done, remove the shrimp from the skillet and set aside.

Pesto Ingredients:

½ cup basil, chopped

½ cup cashews

1 tbsp minced garlic

¼ cup EVOO

Directions:

  1. Combine all ingredients in a food processor. Pulse until not chunky.

Putting it all together.

So you remember the skillet with the shrimp in it, and the sauce in the skillet that I said to set aside. We need it now. Take that and pour it into the food processor with the pesto. Give that a quick pulse. Plate up your spaghetti squash, shred it with a fork. Evenly portion out the shrimp into your meal prep containers, and finally top with the pesto lemon butter sauce. MMMMMM good. I was able to make 6 decent portion meals that will last me the whole week. Enjoy!!!
