Honey Sriracha Ground Turkey Meatballs

Honey Sriracha Ground Turkey Meatballs:

Ingredients: 2lb ground turkey 1 cup breadcrumbs, Italian 2 eggs 3 green onions, chopped ½ tsp garlic powder ½ tsp salt ½ tsp black pepper

Sauce: 1/3 cup Sriracha sauce 3 tbsp coconut aminos 3 tbsp rice vinegar 3 tbsp honey 1 tbsp minced ginger 1 tbsp minced garlic ½ tbsp olive oil

Directions: 1. Preheat oven to 425 degrees F. Line a baking sheet with aluminum foil. Set aside. 2. In a large bowl, combine the ground turkey, breadcrumbs, eggs, green onions, garlic powder, and salt/pepper. Shape ground turkey mixture into 1-2 inch meatballs. Place each meatball then on the foil lined sheet. Continue to do this until there is no more ground turkey meat mixture left. 3. Bake meatballs in oven for 20-25 minutes. 4. While the meatballs are baking, make your sauce. Combine all sauce ingredients in a medium sized pot and bring mixture to a boil. Reduce heat and simmer for 8-10 minutes ish or until it starts to thicken. 5. When the meat balls are done, place about 4 meatballs at a time in the sauce, roll it around, make sure for even coverage and then place back on baking sheet. Continue this process until each meatball has been covered with the sauce. 6. Plate your meal, I cooked rice, and place that down like a bed for my meatballs. Placed about 3-4 meatballs in each meal prep container. Garnished my meatballs with carrot slices and lime wedges. Enjoy!!!
