Hawaiian Barbecue Chicken with Peppers

Hello KMPM Readers!!!

I usually am always on point when it comes to my meal planning and meal prepping and grocery shopping and just buying the things I need for those meals for that month.... well sometimes your gurl falls short of perfection. This is one of those times in which I failed to plan accordingly. That is ok though, thank the Lord that I had extras in the cabinet. That again, usually doesn't happen because usually everything that I buy has a purpose for a specific meal and if I bought it and didn't use it, Kayla messed up. Haha. Anyway, this recipe was made in that moment when I had to be resourceful, and was able to create a delicious and healthy meal. I hope you all try this one out, feel free to create your own experience with this one. Enjoy. :)

Hawaiian Barbecue Chicken

with Peppers

Ingredients: 6 boneless chicken breast 4 tbsp Hoisin sauce 4 tbsp Thai Chili Sauce 2 bell peppers, large chunks ( I used yellow and an orange pepper) 1/3 red onion, julienne 1 can chunked pineapple, drained 3 tbsp olive oil

Directions: 1. Preheat oven to 425 degrees F. Line a baking sheet with aluminum foil. Set aside. Thaw chicken and lay on lined baking sheet. Drizzle with a little olive oil.

2. In a bowl, mix 2 tbsp Hoisin and 2 tbsp Thai Chili sauce together. Coat each chicken breast with sauce. Bake for 20-25 minutes or until chicken is no longer pink inside.

3. While chicken is baking, heat a medium skillet to medium heat with 1 tbsp olive oil. Place chunked peppers and julienne onions into skillet. Cook peppers until lightly chard or

caramelized. Add a little less than 1 tbsp of the Hoisin and Thai chili sauce to the skillet with the peppers. Stir around. When done, plate peppers and onions in your meal prep containers.

4. Place skillet back on the heat and add your drained pineapple chunks. Cook until lightly browned and then place in your meal prep containers. When chicken is done, remove from oven, add more sauce to each breast. Plate in containers. Enjoy.
